Galette de bœuf aux cinq parfums est un petit snack chinois qu’on trouve dans la rue et les restaurants de petit déjeune en Chine. Accompagné d’un bouillon de riz épais et d’un peu de légume marine, c’est extra !
- Mélangez 200g de farine T55, 100ml d’eau et 3g de sel. Pétrissez grossièrement et formez une boule. Couvrez avec un chiffon mouillé et laissez reposer pendant 20minutes.
- Préparation de la farce : 180g de bœuf haché, 50g de coriandre haché, 4g de sel, du poivre, 2,5ml de sauce de soja foncée, un petit filet d’huile, un peu de poudre aux cinq parfums
- Préparation d’un mélange de farine et d’huile : mélangez 20g de farine T55 et 20g d’huile
- Séparez la pâte de l’étape 1 en 8 parts et aplatissez légèrement en forme ovale. Badigeonnez d’huile des deux côtés. Couvrez et laissez reposer pendant 45minutes
- Étalez finement les 8 moreaux de pâtes à l’aide d’un rouleau. Badigeonnez la preparation de farine et d’huile de l’étape 3.
- Mettez de la farce au bout de la pâte 5 et enroulez quelques tours. Ensuite faites des stries sur le le restant de la pâte. Faites attention de ne pas couper jusqu’au bout.
- Roulez et formez une boule. Aplatissez.
- Versez un peu d’huile dans la poêle, et laissez cuire à feu doux les 8 galettes de bœuf jusqu’à ce que ce soit doré des deux côtés.
- Servez-vous.
